Let's start with some basics

Celiac disease is very common. Right around 1% of all Americans have celiac disease. That works out to about 3 million people.

97% of those people don't know they have it.

The University of Chicago Celiac Disease Center - which is the source of the above statistic - has a great site at http://www.celiacdisease.net/. They provide an excellent overview. I'd recommend starting there.
