Right around 1% of all Americans have celiac disease. That works out to about 3 million people.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;97% of those people don't know they have it.&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;The University of Chicago Celiac Disease Center - which is the source of the above statistic - has a great site at &lt;a href="http://www.celiacdisease.net/"&gt;http://www.celiacdisease.net/&lt;/a&gt;. They provide an excellent overview.
