Right around 1% of all Americans have celiac disease. That works out to about 3 million people.<br /><br /><b>97% of those people don't know they have it.</b><br /><br />The University of Chicago Celiac Disease Center - which is the source of the above statistic - has a great site at <a href="http://www.celiacdisease.net/">http://www.celiacdisease.net/</a>. They provide an excellent overview.
